Excitement is brewing among students and faculty at Shadow Ridge High School as the highly anticipated Slim Chickens fast food restaurant approaches its grand opening in North Las Vegas. Located at 2732 W. Craig Rd., at the intersection of Craig Road and Simmons Street, the new eatery is set to offer a delicious menu of southern-style comfort food starting mid-to-late 2026.
The construction of this state-of-the-art facility, which began in mid-2025, features a spacious 2,800-square-foot building complete with a dual-lane drive-thru to streamline orders during peak hours. Managed by Desert Slims LLC, this branch is part of a larger initiative to bring 10-15 Slim Chickens locations to the Las Vegas Valley, ensuring that southern food lovers never have to go far for their fix.

Among the highlight menu items are hand-breaded chicken tenders, flavorful wings, and the famous chicken and waffles. Additionally, diners can indulge in over 17 house-made dipping sauces, including the beloved “Slim Sauce,” sure to elevate any meal. Not to be missed, the “Jar Desserts” feature rotating flavors of decadent cheesecakes and brownies served in reusable Mason jars, providing a unique culinary twist.
Students at Shadow Ridge are already weighing in on the opening.
Sophomore Max Rook expressed his enthusiasm, stating, “I love Slim Chickens; their sauces are so good!”
Rook’s sentiment resonates with many who appreciate not just the quality of the food but also the diversity offered by Slim Chickens’ extensive menu.
Junior James Leavitt added, “I enjoy a good fast food place. I’m excited for Slim Chickens’ opening.”

With its inviting atmosphere and an array of delicious southern specialties, it’s easy to see why students are excited for this new addition.
Kayden Hunter, another student, shared his thoughts, saying, “Every Friday, I get fast food; maybe I’ll try this one.”
As students look for new options in their weekly routines, Slim Chickens promises to be a popular choice, potentially redefining what fast food can mean for the community.
In addition to its appeal as a dining option, Slim Chickens may also become a great place for students seeking employment opportunities. Fast food restaurants often offer flexible hours that cater to students’ schedules. With the growing number of locations in the Vegas Valley, who wouldn’t want to work in a restaurant with a fun and vibrant atmosphere?
The Slim Chickens on Craig Road is not the only new location in the area; another outlet has already opened on St. Rose Parkway in Henderson, and a branch on N. Lamb Blvd. has also recently welcomed its first customers. This widespread development is an encouraging sign for fast food enthusiasts in Las Vegas as the city continues to grow its offerings.
With a menu featuring compelling comfort food, exciting job opportunities, and a location that many Shadow Ridge students can easily access, Slim Chickens is undoubtedly a promising addition to North Las Vegas. As the grand opening draws closer, the anticipation from the community grows, signaling that this fast food future is bright and flavorful.
